    No, there's no distinction on tax like that.
    It's taxed until the ownership changes, so it'll become untaxed with no notice.

    The bigger problem with insurance is that until you get the V5 you aren't and don't know the registered keeper and I can't see many insurers allowing that.

    It's very common they don't.
    It's certainly possible they don't but they usually do. 

    I'm somewhat skeptical that a reputable dealer would buy one without a logbook due to the risk/hassle.

    Cat-S never have a V5, but the replacement comes in a few days (whilst they are repairing it). Probably when the insurer surrenders the V5 the car becomes a Ronin.
    I want to go back to The Olden Days, when every single thing that I can think of was better.....

    (except air quality and Medical Science ;))
