If the transactions you don't like to disclose are not on the first page, is it possible to send only page 1 of the statement? There are various tools (online, offline) for PDF splitting/merging etc. My offline tool of choice is PDFSam (https://pdfsam.org/) and online choice (mostly use it for make smaller file size) is iLovePDF.com.0

If you were asked by me to supply this document and it had been edited or redacted in any way then I would refuse to supply the item/service that you were applying for. If that were to happen how much of a problem would it be? As others have said the silly names are of no interest to them.

@ OP - has the requester specified that it has to be a pdf?
You can open the pdf then take a screengrab of certain sections (use Snip and Sketch in Microsoft operating system) and save it/them as JPG image file(s).
You can either just grab the top few lines (address etc); OR get the top and bottom and join them together in GIMP2 software; OR grab the whole page and overpaint the transactions in either GIMP or Snip and Sketch then save the .jpg.
If you needed the output to be in pdf format, you can Insert the image into a Wordprocessor document (certainly in LibreOffice Writer, probably also in MS Word) and export that as a pdf.
