What sounds to me like the best bit is that what doesn't turn in to butter is buttermilk, which is pretty expensive in the shops, and hard to find anyway. You can use it for drinks, scones, bread, and pancakes to name just a few things.
Strictly speaking "buttermilk" is the liquid left over after the butter has been made. There is no reason why it cannot be consumed. But it is not available commercially - not for humans at any rate.
Commercial buttermilk is a kind of yoghurt, and has nothing to do with real buttermilk.
