So about 40-45 KWh a day or 1200 KWH a month (in winter - should drop to 600 KWH in summer) suggests something more than just a single oil filled radiator for a couple of hours. Presumably immersion heater, shower and cooking and general lighting

Underfloor, fish tanks , garden pond pumps, big fridge freezers - all have been found to be culprits

Guessing at rates last September but say 20p -  thats £240 a month

no underfloor heating, small fridge freezer, no ponds or fish tanks, immersion turned on for one hour a day, at a loss to find the issue, really need a smart meter so we could try and see if something was burning through the kw but they wont fit one, being a digital display we cant even turn things on one by one and see if the wheels spins really fast with something

It will be a bit of a bind but read your meter every hour you are awake, keep a diary of what equipment is switched on.  How are you controlling your immersion - a simple switch (are there actually two) or a timer.

Is it an electric shower or does it use the hot water from the tank? Electric showers use a lot.
One hour a day of water heating is not a lot, my solar panels divert around 6 kwh a day to the tank you only appear to be putting in 3 kwh.

    Superdeal

Like Flexiheat, Superdeal is exclusive to customers in certain parts of southern England. It also has one meter with three rates:

    • One rate records all the electricity you use during the day
    • Another records all of the electricity you use during the night period
    • The third measures all the electricity you use during the seven hours of cheaper-rate electricity for stored heat and hot water

Superdeal works by storing up heat and hot water using the lowest possible rate of electricity. It works best with storage heating, so it isn't usually suitable for homes with other forms of heating.

When are the cheaper, off-peak times?

You get seven hours at the cheapest rate for your stored heat and hot water. In the colder months, one to two of those hours may be during the day for top-ups. You can also take advantage of the cheaper electricity rate for your appliances like washing machines and dishwashers. They're charged at the cheaper rate everyday between midnight and 7.00am.

but surly a 3.5kw shower used twice a day for 5 mins shouldn't cause excessive usage

3.5kW for an instantaneous electric shower is very low.  Where did you get that info?
In any case, you shouldn't be using an instantaneous electric shower at the expensive day rate, you should be using hot water from the immersion heater.
Make sure any second (boost) immersion heater is left permanently switched off.
