There is nothing to defend yet, as the so called court process hasnt started.
You may get a few questions, as they are designed to get a better understanding of your situation so that help can be given  please answer them

You must look at a complaint to planet ice, but before you do you must post it on here as it  must be correctly worded
On pepipoo you were asked if your wifes condition is long standing, and going by this it would appear so :
she has a health condition where she suddenly and randomly feints

One quick question, can your wife hold/have a driving licence or does her condition ( randomly fainting) prevent this?

She does not currently own a driving licence.

What did Planet Ice's manager or the site's overall managing agent who contracted with the parking firm say, when you complained about this harassment?

They can cancel this within minutes.

    Also Half_way asked

PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

Hi, @Coupon-mad She does not currently own a driving licence and we are unaware if this will affect her chance of holding one in the future.

We were never in contact with Planet Ice regarding this. It was only Premier Park contacting me through a letter stating that I've been issued a PCN. With my lack of experience, I thought that if I tell them the truth and reason with them regarding our situation, they will cancel it. It seemed to me that paying for 2 hours, but over staying 25 minutes due to my partner's condition would be enough for human beings to understand we did not want to commit a fraud towards their parking firm, but it seems both them and POPLA disregarded what we experienced and stated we should pay £100 for 25 extra minutes due to the above reason.

Quick extremely brief run down of POPLA and parking

Parking company's belong to something called a trade association.
Trade associations are there to look after their members ( the parking companies) and help them make money
in order to get hold of your personal details the trade association registered with the DVLA and came up with a set of rules for its members to follow - these rules are designed and written by the industry for the industry.
POPLA gets to decide if the rules drawn up by the industry for the benefit of the industry  have been followed.

As for getting in touch with planet ice, this is something you must do - but please post here first.
     a few key words:

    Wifes Condition/disability
    Became ill whilst on premises
Equality act - Agents acting for planet ice ( premier park) have ignored the disability have failed to make any reasonable adjustments - ie extra time required.

A few other bits, be polite do it as if you are informing them about how their agents are acting, and you hope they are as shocked as you are,as this can put planet ice at risk of action or even  court claim  as a result of their agents actions and you hope that they ( planet ice) can lassie with the parking company to ensure that the parking charge is cancelled and that the parking company are made aware of the equality act when dealign with someone with a long term disability
