Because the Claim is not deemd served until 5 days after the issue date. By acknowledging service before the 6th day, you reduce the time you have to file your defence by the number of days before the 6th day.1

The back of your County Court Claim Form tells you:

Note the last sentence there - "The day of service is taken as 5 days after the issue date shown overleaf".
It goes on to say:

Please tell us the Issue Date on your Claim Form.

But you aren't submitting your defence in a rush. AOS and defence are two separate steps.

Ok I submitted my AOS on Monday - I know I still have plenty of time but I want to get my draft defence written so I know it's ready to submit when the time comes.
This is going to probably sound like a really thick question (please be nice, I literally have no clue with all of this and it's mind boggling to me but I need to win this case) but I have copied and pasted the defence template and edited to suit my personal situation however can I just check that it's only section 3 as well as the obvious first and last bits that I need to edit? I should keep in all of the points afterwards? (the parkingeye vs beavis stuff etc)

It is fairly straightforward to understand if you follow the instructions in the template in bold. For paragraph #2 you only need to amend if you are stating you are driver as well as keeper (but only if you were) and paragraph #3 tells you to write about the issues, in the third person but keep it short, punchy and limited to technical/legal arguments and save the story for the witness statement. Resist strongly the urge to write War & Peace! Post here your paragraphs 2 & 3 and one of the regulars will critique it.
