I just use green peppers as usual in a salad - no issue with taste when it is among the other items and dressed.

Not very moneysaving, but my dog broke into the fridge recently and ate all the yellow and orange peppers, but left the green 😂. Evidently he agrees with you all!

Although I can eat them cooked, they hold their shape and texture a lot better

Another one here who doesn't much like green peppers (especially raw). They are, however, nice in a chicken and mushroom pie (though that is a real luxury these days).

I like green peppers.
We use them in tuna risotto, pasta dishes, chicken dishes.
And Turkish liver.
