@Frugalista - I made this soup at Christmas - it was very tasty and very filling. You can jazz it up with more spices7

I had an aubergine as a vege dish in a restaurant many moons ago. It was served whole but was cut and tomato and stilton cheese were placed between the slices. Then it was baked. It was nice enough but my favourite way is definitely parmigiana.
Sliced, cooked and layered with basil, mozzarella and tomato sauce. Maybe the spinach could go in the layers7 -
I treat celeriac like taties - peel, boil, mash. Wee bit of butter maybe. Then serve stuff on it. Goes nicely with fish, but I've done it with pork too. Lovely flavour of it's own so I wouldn't be doing anything too spicy with it.Shout out to people who don't know what the opposite of in is.8

I like celeriac. It looks scary but it's delicious! Simple peel, boil and mash, mix it with mashed potatoes. I'm sure there are more imaginative ways but start simple. Good luck!8

My son makes vege bacon with aubergine.
Sliced thinly, oiled and spiced with smoked paprika, soy sauce and baked/airfryed. Haven't tried it myself.8 -
@Frugalista I love the BBC's aubergine chilli. My family are dead as set meat eaters but they all eat this. We call it chocolate chilli7
