If this is such a concern why do you value your own health so little, surely paying for the cheapest seats you can for peace of mind is a small price to pay, it will also save you a lot of stress as well. I can’t imagine your insurance was cheap, I assume you did explain to the insurers how dangerous this could be especially if abroad in strange surroundings, and I imagine that put your premium up a lot.

Yes I do pay a lot for travel insurance but that is because there is an actual cost to the insurer. I pay extra because they are taking the risk that they will be out of pocket if I need medical treatment abroad. Here, there is no cost to Ryanair for seating us together. With other airlines even if we don't pay for a seat, we have always been sat together even if it's across the aisle from each other. Ryanair deliberately seat people far apart m

Isn't the issue here that anaphylaxis is not a registered disability, so Ryanair are within their rights not to provide a special assistance seat?

(It's something I suffer from too and yes, it is very scary. I would just pay for the seat for peace of mind.)
I think it would be counted as a disability if it has a substantial and long term effect on daily life, which I would say is the case - also as part of a wider health condition that I have. I don't claim any disability benefits because I am able to work but I have been told I would qualify if needed.

Just in case you weren't aware, PIP is non-means tested. You may not wish to claim, not everyone does, but it can be helpful evidence at times for some concessions.
All shall be well, and all shall be well, and all manner of things shall be well.

Pedant alert - it's could have, not could of.

Vote with your feet and book a different airline then. Maybe this is inconvenient but if you felt that strongly about it this wouldn't be an issue

You seem to be aware of Ryanairs seating policy so it's difficult to understand why you would book with them.
