Why doesn't it surprise me that Ryanair travel insurance apparently doesn't insure against getting Covid whilst away - pretty much the main thing people are likely to be worried about during the epidemic.0

You need to ensure that any insurance covers you for eventualities that may occur.
COVID is not new.
