Realistically the problem here is not Google/Gmail/YouTube/Quora or anything else other than your paranoia and seeming refusal to deal with perfectly normal systems. Yes Google shares some anonomised data, no they don't sell your soul. Making mountains out of molehills would be one thing, making mountains out of nothing is quite another.2

There is no such things as a separate Youtube account or Gmail account. You have a Google account which lets you access all of Googles services such as Youtube and Gmail. You log in/out of the account which logs you in/out of all Google services.
Also I am being bombarded with emails from Google telling me to go over my privacy details, which I have already done but it doesn't stop their emails. I have marked them as junk, as I don't suppose they will go away and there is nothing I can do to stop them. Google doesn't have real privacy details anyway, there is nothing I can change as I would wish to.It will then leave your real name intact for your email account.Everything you described as a problem has a solution if you just calm down and put your energy into finding the solutions rather than ranting about it.1 -
Have you thought about using a different browser for your YouTube/other account activity? E.g if you use Chrome for one, you use firefox or internet explorer, or duckduckgo or opera for the other?
