Ooohh apple cake is a favorite of ours to @LotsOfTea, but have a few pears to use up so might make a pear cake instead over the weekend.
The egg curry was delicious and very simple - soft boil the eggs (6 and a half minutes works for me), then fry off some crushed garlic for 30 seconds, add in a curry cube (I used the S&B golden curry ones as we had them in the cupboard) and melt it down with the garlic. Add a little water to thin it out a bit, let it boil so it thickens again and then add in the peeled eggs and some finely chopped spring onions. Let it cook down, and the eggs warm through and serve over rice. The jammy eggs worked really well with the curry sauce and now I have enough of the cubes left to make another 4 portions when I'm in need of a quick dinner, or I have eggs to use up.

Oh yes, custard would be excellent with the cake! I'm really hoping I have some in the cupboard 🤞

This weekend's baked item was cheese scones and I think @LotsOfTea is right. the raising agent has probably gone stale, they look ok though and taste ok. Just rather flat

The shelf of random tins is finally looking better, last night the last 2 tins of chickpeas were used up in a stew with a tin of tomatoes and the carrots, onions and veg from the bottom of the fridge loosely based on an online idea and it was delicious. So much so I think it will become a favourite (and cheap too).Made it to mortgage free but what a muddle that became

We finished off the last of the very nice curry last night for tea and I deliberately cooked too much rice so we can have fried rice tonight. Today's lunch will be the last of the disappointing soup into which I'm going to stir half a pot of smoked hummus which I brought out of the freezer a couple of days ago. I was shocked to notice the date on it and realise it had been in the freezer 3 years! I would have guessed at a few months. Anyhow, it doesn't seem to have done me any harm eating it so far so I'm happy to use it up. It's made me more determined to use everything up and start again with a proper system though.
The apple cake is going down well and hasn't needed extra custard yet but I shall check the ZA stores today to see if I've got any and buy some tomorrow if not.
I consolidated a load of half used packets of veggie burgers and sausages into one freezer bag recently to create more space in the freezer and so I'm using them up in a lucky dip kind of way. Quite a few have been there several years and are turning out a bit dry so I'm tending to use them chopped up and fried in things like stir fry as they're better like that once they're a bit past it. I've taken 2 burgers out of this stash to add to tonight's fried rice. Again, once I've used all the outdated stuff up I can mark everything with a date going in and keep a proper inventory so I don't keep things past their best.4 -
Our Sunday dinner yesterday wasn't traditional: we had a chicken dinner with friends on Saturday and on Sunday we finished a batch of corned beef hash with baked beans, fried onions and peppers, and DH finished the baked apples with the last scrap of the spiced bread pudding (I was full). DH also made a cake so there are no more of the old box of eggs to use up.
There is still salad in the fridge from nine days ago and it seems okay, but I'll buy fresh for tomorrow when I host my friends and we always have pizza and salad. Not sure what we're having today but I'd better have a look in case I need to start cooking.
Menu for the week looks like this:
Monday - no idea.
Tuesday pizza for me and friends (DH can't have cheese so he gets something for himself).
Wednesday, Thursday - I'm working so we each get our own dinner and I'm unlikely this week to have time to put something in the slow cooker.
Friday-Monday - I'm away so DH caters for himself.

Started another jar of the honey from when we kept bees. There is a lot left, but it keeps for ever.
Salmon from the freezer, bought when it was on offer.
Checked through the stored apples and have some more to stew today.3 -
Cod and butter bean stew with bread out of the bread maker. This will be the last of the cod in the freezer and the last of the tins of butter beans. Needs a tin of tomatoes but there are some cartons of passata so will use those up.
Tested the baking powder using a tip found on google (1/4 teaspoon into a bowl with quarter of a cup of boiling water and should fizz - mine did not) and found it was no good so thrown away. The drawer of spices etc has been thinned out nicely now and only things that are usable have been kept.

Still battling away at emptying the poorly freezer (the bottom drawer is now frozen solid to the base of the compartment
) and have also used some pantry items.
Out (freezer): Two lemon & herb dusted sole fillets, pork mince that's simmering away with chopped onions and celery plus a part bag of mixed veg (two dinners for this week), a large Cornish pasty (for tonight), two pain au chocolate, two small baps, two Cornettos, two choc ices.
Out (fridge): Chicken & stuffing and ham slices for sandwiches, fresh orange juice, blue cheese, soft cheese.
Out (pantry): Small tin of corned beef (about half left), a raspberry jelly and a tin of peach slices, tin of pink salmon, tin of mushy peas, two currant teacakes.
I'm hoping to use up what's left in the fridge/freezer over the next couple of weeks, hopefully there won't be too many casualties to bin. Oh, how I'm looking forward to a new appliance!

My friends came round this evening so I bought pizzas and salad. L1dl has a featured offer of one with goat's cheese, fig and honey which I decided to try and loved it, though it's not very substantial. Anyway I polished that one off while clearing up!
So now I have a bowl of salad plus half a bag from the other day and really need to turn it into something. DH is unlikely to have any. I still have half of another small pizza for lunch tomorrow, with some cous cous.
I also used some coffee bags I was given and thought about composting them but went all MS and wondered about reusing them? They seemed like a great deal of coffee for one cup. I've stuck them in the freezer for now to save making a decision!
I also have posh biscuits which may not last till the weekend but at least I've done them up tightly in a bag to keep them as fresh as possible.I think a bit of sunshine is good for frugal living. (Cranky40)
