So I just can’t seem to find an answer to this question.
At present (December 2021) the rule seems to be that we can take our children (13 &15) to Tenerife if they’re “double vaccinated”, except here in the UK we’re not double jabbing children. If nothing else it’s only 1 month since they had the first dose.
So what happens next? The children are NOT double vaccinated, and can’t be as that’s not on offer in the UK. However there doesn’t appear to be an option to travel without double vaccination but with a negative test?
so do we have to scrap a family holiday for 7 people because 2 travellers have had 1 vaccination but are not eligible for a 2nd???

Unfortunately Spain changed the entry requirements last week so a lot of families are in a similar situation as you are; with their children aged 12+ under the new rules not eligible to enter Spain.( as Spain does not consider them fully vaccinated)
There is a similar thread here :

Unfortunately this is a problem with UK teenagers that they can't get vaccine and Spain won't allow over 12s without vaccine.
So I am afraid your trip is not viable. Insurance won't cover this as this fact is known to you before travel unless new rule came into force AFTER you booked your holiday.Happiness is buying an item and then not checking its price after a month to discover it was reduced further.0
