DAY 22 OF SLATE’S ADVENT A TO Z OF CHEESE: Vintage Lincolnshire Poacher.

V is for Vintage Lincolnshire Poacher made on the Jones family’s sustainably run farm near Alford from the raw milk of their Holstein-Friesian cows. This traditionally-made cheese is similar to cheddar while also reminiscent of Alpine cheeses such as Comté and Gruyère. Matured for 22 months on wooden boards, Vintage Lincolnshire Poacher is smooth and rich. It has more depth and complexity than younger Poachers, a lingering aftertaste and definite hint of sweetness.

DAY 23 OF SLATE’S ADVENT A TO Z OF CHEESE: Norfolk White Lady.

Little known outside East Anglia, Norfolk White Lady is a full fat, Brie-style cheese produced by Jane Murray at Willow Farm Dairy near Norwich. Made from pasteurised ewe's milk, it has a bloomy white rind and pale ivory paste. The creamy texture and rich flavour of this mould-ripened cheese develop with age. Similar to Village Maid's Wigmore, its taste is slightly sharper than traditional Brie due to the natural tanginess of ewe's milk. Norfolk White Lady needs extended warming at room temperature to enjoy at its oozy best.

DAY 24 OF SLATE’S ADVENT A TO Z OF CHEESE: Wild Garlic Yarg.

It's Christmas Eve and this is the final cheese of our Advent A to Z. Cornish Yarg is produced by the award-winning Lynher Dairies in Ponsanooth, mid Cornwall. Creamy under its natural rind and slightly crumbly towards the core, Yarg is well known prettily encased in locally foraged nettles. This delicious variation is made with wild garlic picked each spring from Cornish woodlands. The vibrant green leaves have a pungent aroma and impart a gentle garlicky flavour. Their higher moisture content gives the Yarg a slightly firmer texture than when nettle-wrapped.
