Mellow with lingering nutty flavours, Rustler is a hard ewe's milk cheese from White Lake Cheese in Somerset, a variation of their goat’s milk cheese Rachel. Brine washed to develop an orangey-brown rind often spotted with bright natural moulds, and an exceptionally smooth texture, Rustler is matured for three months for hints of caramel to evolve. It is delicious with a slice of quince or spoonful of medlar fruit jelly.⁠
