Is there any way to use a giffgaff sim for receiving calls only without putting any credit on it?
And if there is, how can I find out what the phone number is, as I can't make any outgoing calls to find out what the number is and the number isn't shown anywhere on the sim or the card the sim came on?

No, giffgaff SIMs are not allocated a phone number until you either add PAYG credit (minimum £10) or buy a monthly goodybag (minimum £6).
If you want a free SIM with a pre-allocated number try RWG Mobile (on EE network) or Three's free Data Reward SIM.1
