  • I'll be using a 20 minute recipe from Jamie Oliver's Ministry of Food tomorrow night so I'll let you know how it goes!

Speaking of which, does Stroganoff freeze ok, coz i might do a batch, can't find it on a search of the freezing threads, that's how i ended up here! x

  • I use:
    Beef
    Mushrooms
    Creme Fraiche
    Onions
    Wholegrain mustard
    Mint
  • I think they probably are all different as the dish has been adapted globally.

    I make mine with;

    beef
    onions
    mushrooms
    sherry
    soured cream
    paprika.

I thought paprika was an essential ingredient it in but it seems that it is often replaced with tarragon or tomatoes.
  • I make mine with turkey or beef:

Cut meat into strips and coat with seasoned flour & paprika (shake off excess). Heat some oil in a wok or large frying pan. Fry sliced onions (red onions are really nice), then add meat and loads of sliced mushrooms (chestnut are good) - if I'm doing turkey I add some florets of broccolli too. Stir, cover and turn down to a low heat and cook for 10 mins. Add a tub of sour cream and stir well and heat through. Season to taste and add a little mild mustard if liked. Serve on Jacket Pot or rice...delish...

I've also seen Nigella's mushroom stroaganoff in her Feast book, which also looks good, but I have never tried it. Been making the version above for years.

  • This is my family version of Beef Strogonoff, my Mum now adapts it sometimes and uses pork.

Cut steak into strips - fry in a little butter for a couple of minutes.
Remove from pan - add chopped onions, fry for further couple of minutes then add sliced button mushrooms.
Once they are cooked return steak to the pan, season & add a good glug of white wine (sorry we dont do precise measurements!) then add cream to the consistency you want (I use whatever cream I have lurking) cook for a couple more minutes then serve - wehave it with rice.

Actually havnt had this for some time so think will be on next weeks menu plan.x

I use this recipe - easy and tasty. Not the traditional version I don't think, but like you say, all the recipes seem so different.

Fry beef strips, take out and keep to one side.
Fry onions in the same pan with the beef juices and a spoonful of butter, for at least 5 minutes until soft and see through-ish
Add a small spoonful of flour, stir in then add teaspoon of mustard, 1/2 teaspoon of tomato puree and a sprinkle of Paprika and squirt of lemon juice along with a small tub of soured cream. Stir through then add the beef, stir and serve. make sure you don't overcook once soured cream is added.
