After speaking with them they say there is nothing they can do. Policy is clear £848 for a hotel I cancelled with minuets. They know the circumstances, they just keep saying it’s policy and they will take cash but won’t say when. I won’t have the money in the account. Not sure about how the bank will charge me?

If you paid on a debit card they will take it from your account and put you in an unauthorised overdraft with associated fees/interest. Given you posted on the CC board, if you paid by CC they will charge that and then the bank will take it from your account in one go or based on whatever payment setup you have

 Would it not be better to try and change the booking rather than cancel it if you wanted to go?

The time frame between booking and cancelling are not relevant and I'll ask again what is it you want to achieve?
"I made a mistake in booking" does not clarify whether you still want to go, want to go at a different time/place or you don't want to go anywhere at all.

At this time their cancellation policy is what is in play, what does that say? Depending upon what you want to achieve it may give different options for you to exercise.
