I find it curious that rather than cancel the MET demand (as you are able to do), you would rather risk negative publicity and the forfeiting forfeiture of future customer spend in your restaurant(s),Some suggested tidying up.Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

I find it curious that rather cancel the MET demand (as you are able to do), you would rather risk negative publicity and forfeiting future customer spend in your restaurant(s), which I can assure you will be considerably more than the value of the penalty charge notice. This is after I politely made my case in person in the restaurant and put my complaint in writing, as requested by your business manager, Mr Sxxxx. Incidentally, during our discussion Mr Sxxxx said he would not wish to lose custom – but that approach appears to be at odds with the one you have taken so far. Perhaps that point should be noted by the operations area manager for McDonald's Restaurants Ltd.3

This has run its course now. You are writing fancy letters. They are replying factually and don't seem at all phased by your implicit threats and management jargon.
Decide if it is worth going to court over (it is not) and move on.0 -
Seeing as MET don't do court, the OP can sit tight quite happily and doesn't need to be fazed.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
