each claimant needs to be emailed a SAR to the DPO at the parking company , to get paperwork and pictures etc coming back to you , attaching a copy of the claim form as proof of I D under the GDPR law.

Not too late , because the data reply is of more use at the WS stage in several months time , so you are getting it done and out of the way , nothing to do with the defence , everything to do with the later stages , which will be months away2

I make your deadline date Monday the 27th September at 4pm , not the 21st
Issue date was 23 August and AOS date was 6 September
The deadline date is 33 days after the issue date , so you have longer than you thought , because weekends are not counted as deadline dates2 -

I have received a letter from County Court Business Centre - St Katharine’s Street Northampton with claimant - Civil Enforcement Limited which was issued on 23/08/21 ...
On 06/09/21 I did AOS but I do not know how to write the defend.
With a Claim Issue Date of 23rd August, and having filed an Acknowledgment of Service in a timely manner, you have until 4pm on Monday 27th September 2021 to file your Defence.
That's over a week away. Plenty of time to produce a Defence, but please don't leave it to the last minute. To create a Defence, and then file a Defence by email, look at the second post in the NEWBIES thread.Don't miss the deadline for filing a Defence.
Do not try and file a Defence via the MoneyClaimOnline website. Once an Acknowledgment of Service has been filed, the MCOL website should be treated as 'read only'.2 -

You are mistaken but no need to take my word for it.The back of your County Court Claim Form tells you:
Note the lasts sentence there - "The day of service is taken as 5 days after the issue date shown overleaf".
It goes on to say:
This is confirmed in the Money Claim Online (MCOL) - User Guide.
On page 14 of that document it says:How long does the defendant have to respond to my claim?
The court will send out a claim pack to each defendant once the claim has been issued and allows 5 calendar days from the date of issue for the service of the claim. Therefore the 'date of service' is the 5th calendar day after issue.
The defendant has 14 calendar days from the 'date of service' to file a response. If the last day for filing the response falls on a day that the court is not open (i.e. a weekend or public holiday), the court will allow the next full working day for a response. The defendant can extend the time to respond to 28 calendar days by filing an acknowledgment of service (AOS).3 -
Thank you so much for explaining. I do understand now. Such a relief that I do have over a week from now to do the defence.1

No problem , it's why we always ask for issue date and AOS date , plus because you have 2 different cases , it why you needed 2 different discussion threads , to get proper advice on each case separately1
