EasyJet Infant Voucher

My flights to Spain for the family on May 2021 were cancelled in March. I opted for the voucher to rebook for free at a later date. (Email had "You can switch to another easyJet flight for free."). My youngest was under 2 so had an infant ticket which is a flat £50 return. I have rebooked for May 2022 however my youngest will now be 2 so not classified as an infant. When I rebooked online it kept the ticket as Adult + 1 infant. I called up EasyJet and they have said I need to book a new ticket for the child. The cost for the new ticket is ~£500. Are EasyJet in their rights to say due to the infant getting older they and changing to a child they are not covered? From their perspective they can say that they are offering flights for family + infant and now I am asking for something different?
