Hi

I have my own phone (iphone 12) but I have been using a sim provided by my employer in the phone. I am due to leave my job at the end of the month and so will be handing back the sim. I've got a new one ready to go in the phone.
I obviously don't want my employer to put the sim in another phone and find lots of my personal info/texts etc, so just wondering what is actually stored on a sim these days and what I need to do in advance of handing it back?

All the sim stores are phone numbers. Everything else is on the phone.

And contact details with the numbers, and sms messages. (and possibly some billing data)

Though these days it is very unlikely to actually be used for that.

OP, you can always snap the sim taking it out if you feel paranoid! If work needs the account a new one is easy to get. Is there not a sim tool on iphone? No idea as I use android devices, whichdo have one.

The only personal information would be basic contact details for a limited number (between 99 & 399), probably 10 to 20 texts - not sure about call logs, don't think so.

I'm not 100%, but at an educated guess.

Actually it seems that the iPhone does not store anything on the SIM as @nick74 said:  https://www.lifewire.com/what-is-iphone-sim-card-2000363#what-data-is-stored-on-iphone-sim-cards
