I have an email after my interviews with an offer, job title, salary but other than that I have nothing.
I can probably stay in my current job if I spoke to them, but when do I give it till to sort that with my current job, if I've got 2 weeks left before I leave?
That was the OP and then

So, when I got the offer over email, there was a "provisional" start date, however nothing has been said since.   . . .
So you resigned on the basis of the provisional start date.

Do you want to move to the new job or not?  If you try to negotiate with your current employer without formally withdrawing your notice would you then mess them around by still leaving for the new job?

If a huge company (i.e. one which should have reasonable resources and processes in place) treats you like this before you even start, how much value will they place on you when you do start? Unless it's the offer of a lifetime(!), I'd be trying to smooth things over with your current employer right now.
It is often huge companies that have gone through process efficiencies, HR moved to a self service model etc etc and so certain central functions like HR are proportionately  small -v- a medium sized enterprise.

Unless things go wrong you can go a whole career without ever having a conversation with HR these days and so just because its a proportionally small team wouldnt make me concerned about working for the company (unless Im in HR)

...except in their first post OP refers to 'having been in regular contact with HR', so not sure how your above comments would serve to reassure them.
Maybe they won't but "having regular contact with HR" could be the OP sending excessive message to HR and the limited resources have entertained them to a fashion and has now drawn the line.

My ultimate point stands... I don't think an unresponsive HR department is the sign of a poor company to work for and I wouldn't expect regular contact between accepting an offer and starting including not receiving contracts until the first day so wouldn't be overly concerned.

Whenever I have changed jobs in the past I have always had my new contract before handing in my notice, it sounds like things have changed a lot!
