Just read that Microsoft is pulling the plug on Edge in March.
I run that on Windows 10. Do I need to do anything or will it automatically roll over to new one? Also, will I lose anything not backed up?

You shouldn't lose anything. Just install the new Edge now. You should always have backups.

It's Edge Legacy that is being pulled (based on stripped down IE) to be replaced with Chrome based Edge
I've been using the Chrome based one for a while now through the dev channel2 -

OP, you may already be using the current (new) version of Edge which has been out for a while now, all they're doing is removing the older, legacy version. To check, click on the three dots at the top right corner of the browser and select Help and Feedback, then About Microsoft Edge.2 -
You can tell the difference between old and new Edge just by the icons.

I don't want to use edge but my laptop seems to want to default to it from ie. How can I stop Edge from taking over please?

You shouldn't be using I.E anymore it's a non supported browser than Microsoft has ditched, that's why it's defaulting to the new Edge. Best course of action is to learn how to use it...
