Lastminute vouchers - what to do?

I have a grand in LM vouchers that have accumulated from various flight refunds during the COVID period.
I do not need to book flights now but what if LM goes bust and these vouchers become meaningless? Should I book some flights in the future ( end of this year / beginning of 2022 ) just to utilize these vouchers ? Then, if I don't really fly out, I can call the airline and change the dates. LM lists Flexible booking during flight searches but when youa ctually try to book,  you are given the option to go Classic or Flexible and advised to choose Flexible for about £80 more that will let you change flight dates for free. Doesn't the airline's policy override LM policy?

Btw, I was thinking of Emirates.

What would you guys recommend I do ?

    Be very wary taking on LM's Flexible booking options.   All they mean by that is they they (LM.com) won't charge any of their own admin fees if you want to change your booking.  They cannot change the airline's T&Cs, so if there is more to pay to the airline, then that would still need paying.

    Personally I don't think this is very clear on their site, but I guess that is deliberate!

    That's a decision up to you.  LM.com are part of a large Spanish/Swiss company.  I'm not sure about their financial position, but obviously every travel company is suffering at the moment.

    As you say, booking a flight derisks you somewhat, but the great unknown with that is the ever changing travel restrictions.
