Cheap and practical lo-carb recipe for lunch @ work

Hi,

I am starting a new job on wednesday but i will have to drive for 45 miles which means no coming home for lunch and not much time to prepare lucious stuff in the evenings. As I am saving for a deposit on a house, I want to be able to bring my own lunch at work. The only problem is that I am following a lo-carb diet and cant eat pasta, rice, grain, pulses, bread, which are usually cheap.

Anyone has any idea about freezeable, lo-carb, filling, reasonably quick to prepare recipes?

Not asking for much, am I? ;-)

    There are all sorts of sandwiches and packed lunches listed in our Old Style Recipes Collection. You can find this by using the "Collections" sticky at the top of the board or by following the clue in my signature below. :)

    Some of them might give you ideas to work with.

    My 3 bean and tuna salad is in there under lunches. If you can eat chickpeas and kidney beans that should do you for one day at least :)

    No-crust quiche/flan? Sorry I don't have a recipe yet, I've only just invented it but will try it out at the weekend for you;)

    Vegetable soup? Loads of possibilities - cream of brocolli, cauliflower, pea soup, mixed veg etc etc. Serve with some cheese. Yum!

    Buy some chicken drumsticks & freeze in pairs in a marinade. Take out of freezer in morning, put in oven while cooking your dinner that evening & take to work the next day with a big salad.
    Cold cooked thingy-tail sausages & cubes of cheese with salad.
    Do you have a microwave at work? Take a couple of eggs to scramble & buy a pack of smoked salmon trimmings.
    Home made soup, so you know what's in it.

    I always get those mini chicken fillets, and marinade them in whatever is to hand, stick them on the george foreman, and put in a tupperware box with a load of salad. For salad dressing, I just make or buy big bottles, and decant into a clean jar, one of those mini jam screw top bottles you always get in B+B's etc (although you can buy them from morrisons too), and put it in the fridge for the next day. Its easy enough to prepare while Im making my evening meal and is easy to transport. Often I add some roasted veg aswell, peppers, onions, whatever is to hand really.

    Sometimes I add flavoured rice or pasta too, if im feeling particularly hungry! Is equally nice with things like tuna, or salmon too.

    I'd also recommend taking loads of fruit to leave on your desk for when you get the midmorning/midafternoon munchies.

  • Thx trace-j, but you cna only have some type of fruits on lo-carb, at least during the weight-loss period.

    My first thought was soup - there are tons of links for soup recipes round here. In my mind it's not the same without crusty bread, but then to me there's no point eating if you can't have any bread, so there you go :)
