Cheap and practical lo-carb recipe for lunch @ work

Hi,
I am starting a new job on wednesday but i will have to drive for 45 miles which means no coming home for lunch and not much time to prepare lucious stuff in the evenings. As I am saving for a deposit on a house, I want to be able to bring my own lunch at work. The only problem is that I am following a lo-carb diet and cant eat pasta, rice, grain, pulses, bread, which are usually cheap.
Anyone has any idea about freezeable, lo-carb, filling, reasonably quick to prepare recipes?
Not asking for much, am I? ;-)

Cold cooked thingy-tail sausages & cubes of cheese with salad.
Do you have a microwave at work? Take a couple of eggs to scramble & buy a pack of smoked salmon trimmings.
Home made soup, so you know what's in it.
Sometimes I add flavoured rice or pasta too, if im feeling particularly hungry! Is equally nice with things like tuna, or salmon too.
