What has the claimant having insurance got to do with parking ?
I have been coming here almost daily for 8 years , never seen that question asked before1 -
IPC's COP 24.1 Operators must have £5m of public liability insurance. Also required if operator requests keeper data electronically from the DVLA. Which I believe was requested.0

Employers liability also required at £10m minimum0

Those are irrelevant to the claim against you ... they are merely requirements to belong to that Boy's Club.2

Be careful not to have a scattergun defence , a judge might not like it , they tend to focus on the signage , contracts and the events, they usually say these other issues are for another court or between the IPC and the parking company , like planning permission is a matter for the council1

No. If that were necessary, the guidance notes would say so.
