Completing but letting the seller move out 2 days later. Bad idea?

Terrible idea. Your "worst case scenarios" are they trash the house, or they refuse to move out, and in either of those cases you're in a whole heap of trouble.On completion date, the sellers leave, period. They don't have to remove their belongings; like NameUnavailable says, there is little difficulty with you storing them for a reasonable period. But the people have to go.

I look at it this way. Your seller is wanting to put you out, so that they don't need to be put out.

If you have the space and you really do trust them, you could offer to let them leave their furniture in the house to be collected on 21st. Tell them to take their personal items with them & book into a hotel/B&B for a few nights.
On completion day, collect the keys and change the locks. This is probably one of the occasions where this is really important.2
