Your annual gas consumption works out at about 10031kWh which is about 16% less than the average domestic consumption of about 12000kWh.So the verdict is to start comparing via Citizens Advice and 'Switch with Which?', and to replace electricity usage with gas wherever possible. However, you won't be able to leave with that amount of debt. If you can't clear it all in one go, ask for a payment plan and switch to the cheapest tariff available from E.On.0

Good morning marshalltim, there's a couple of us from E.ON that monitor these forums and try to help where we can.
The first point I want to clarify is that if this balance is correct then it's not a death sentence, Christmas is cancelled type scenario. We know not everyone is going to be in a position to pay £600-700 in one go, especially taking into consideration what's going on at the moment. We can explore various options for you in terms of paying in instalments to make it as affordable for you as possible.
I've had a look at those screenshots you've attached and can understand why it's a bit difficult to work out what's going on. As you know you have Smart Meters that are sending us 'Actual' meter readings every month (denoted by the A next to the readings). It seems the account then closed on an Estimated reading but this shouldn't be too far out as it's only estimating <1 months worth of usage.
This bill shows us 'backing out' of all previous bills/charges and then starting again from August 2019. Page 3 shows all the previous bills being credited back to the account to allow us to then start over. I wouldn't know exactly why this has been done but nothing looks particularly untoward, despite there being quite a lot of information on there. Often a bill like this will be produced if the account has to be checked/investigated by a back-billing specialist.
I expect this is a case of your regular payments not covering your actual usage for the last 12-18 months. If you login to your online account you should be able to get access to a page to view all previous bills AND payments alongside one another. This mirrors almost exactly the way we see things our end and can be really helpful to give an overview of how the account was doing.
It sounds like you may already be in discussions with us about this and we have advised we're dealing with it? If you have an open complaint then the complaints manager will work with you towards a resolution. I believe this is the right thing to do and hope that you manage to get this sorted. As I say if the balance IS correct then we can absolutely organise for you to pay in instalments.

@marshalltim Gerry has done the hard work for you and you have had suggestions as to where things are going wrong - look at that immersion heater, room heater, electric shower.
If you increase your gas consumption to 12000 kWh and decrease your electric to 4,000 you will save £400 a year. That's a good reward for little effort.
I don't know which Eon tariff you are on but roughly your annual bill is about £1500 a year. As you now owe £700 it looks like you are only paying £80 a month .Never pay on an estimated bill. Always read and understand your bill0
