iWatch and iPhone Contract

Both my iPhone and iWatch contracts are with Vodafone. I plan on selling my current iPhone and paying the early termination fees as I’ve found that the newer model is cheaper per month with EE and the termination fees will be covered by the sale of the phone.
The question is, I’m not early terminating my iWatch so what will happen with that? It’s a Cellular model. Once I pair it with my new iPhone on EE will it work over Cellular with my new network or am I relying on Vodafone cooperating?
Cheers.
