Sykes Cottages Advice Please

Hi all!
I have a booking with Sykes cottages starting 30th December this year. It is for 14 people, 7 different households. Booked well before Covid was even a thing!
As soon as the rule of 6 / no mixing of households rules came into play, I contacted Sykes for advice on cancelling the booking, but it wasn't an option without losing around £800. (so far I have only paid £69 deposit, but the deposit was paid during a "low deposit" offer, in the small print you are still liable for a certain percentage of the full cost of the holiday should you cancel, hence the approx. £800 charge if I do cancel). They wouldn't make any allowances on this despite the new laws around Covid, because "the rules can change at any time" - fair enough from their perspective but not ideal in terms of being massively out of pocket not knowing whether the holiday will go ahead or not!
The full cost of the holiday (around £2000) needs to be paid on 18th November. I am really really reluctant to pay this in the current situation where I'm really unsure whether we will legally be able to go on the holiday. I would rather just cancel the holiday altogether so then we know where we stand. I can't cancel directly with them without losing the £800.
Do I have any other option than just waiting it out? I have been told I can block the payment via my card provider and just lose the £69, but what are the implications of this? Will it give me a bad credit rating? Can they then still chase me for the money because of the booking agreement I have with them?
Really appreciate any advice!

The booking arrangement is a legally binding contract between the parties. What does it say with regards to default of payment?1

I think this is the relevant part:
7.8.2 if you did not authorise us to take payment from your chosen payment method for these amounts when you made your Booking, you will need to make these payments either by using the payment feature within your account on the Site or by contacting us by telephone using the number in the Contact us section below
