Buying iPhone 12 Pro and Apple Watch cellular - recommended tariffs O2 vs EE vs Vodaphone?

Apologies for what might be a complex question, but navigating the various options, and after scouring MSE, it is driving me crazy!
 I am going to but the iPhone 12 Pro and a cellular Apple Watch to pair with it. I understand O2, EE and Vodaphone are the only providers who can support this.
From people's experience, e.g. with the iPhone 11 range, and Apple Watch, can you give me an idea of what tariff I would need, and the cost of the phone data/call plan and watch add on tariff cost? I was thinking around 10Gb of data would be my monthly usage with relatively little text and call usage.
Finally, and probably more difficult, if you managed to get the cost below buying direct pairing with a cheap tariff.

    Which of those networks give you best/ worst signal in the area you frequently use ??

    Not much in it in terms of 4G to be honest - I travel across the country a bit. Locally 5G 'might' best be from O2, but no way to test at moment other than based on coverage maps/sites. I will probably base my decision more on cost than local usage initially.

    As the OP wants to rush out and buy the latest iToy before it's even available, I doubt that cost is a concern to them.
