if they force you to work until you can no longer do so, then you would fall ill and that would be counter productive. maybe speak to your boss and explain that you are very stressed out and having sleeping problems, and that if you had to continue to work without a break, you will end up being sick and won't be any help to them.

I’ll have to have an awkward conversation this week with my employer which I’m sure won’t go down well.

i would play the 'i am not feeling well and i feel exhausted and i am sure i am going to fall sick and it will take a long time to recover' play it softly, say that you are willing to work and help the company and you appreciate the pay, but it is getting beyond your control and you are getting very worried about your health. if they start thinking you will be pulling a sickie soon if they don't let you take your break, they may come round to the idea that it would be good for everyone to let you take a week's leave right now.
you just can't demand the leave over christmas, just when they can cope without you as the employer has the right to ask you to take annual leave at times that do not have an adverse impact on the business.0
