Bloke question about chicken breasts

Thanks to the help I've had from the good folks on here, I'm nowadays happy with my slow cooker, with chicken casserole  and also with poached chicken breast.  Woo hoo!
However, I'd like to vary it a bit with the chicken breasts so that my Lady Wife doesn't get bored with the two ways I know how to cook them.  What other basic ways of cooking them are there if we don't have a microwave or indeed one of those probe meat thermometer thingies?  I'm not excited at the thought of grilling them 'cos of the potential for messing up the grill and besides it's more washing up.  Can I just pop them in the oven on a tray, or will they shrivel up and dry out if I do?  (I'm only after the basic cooking methods btw - not recipes as such, thanks.)

    If you wrap them in tin foil or pop them in a roasting bag they will not dry out when you put them in the oven though do watch your timing.  I much prefer skinned and boned chicken thighs for my recipes as they cook and hold moisture better.

    How about a stir-fry?  Only one pan (wok) to use and wash-up.

    When I read the title i thought it as about using falsies lol!
    I cut them in strips then flatten them by pounding with a small jar covered in clingfilm either marinade or use cooking sauce. They fry quickly in a little oil and you can cut them in half to see if  cooked through though this is generally self evident. Can also cut into whole breast, flatten them out aand stuff with a flavoured cream cheese,. roll in foil and bake,, can roll up in bacon or parma ham for extra flavour.

    Ahah!  Thanks folks :)  Stir-fry's definitely an option, and the flatten/strips/fry thing too.  I guess I could wrap them in foil, bung 'em in the oven and with perhaps 5 minutes to go to recommended time, slice the thickest part of one open and see if it looks poisonous.  They'll be well thawed, so near as dammit room temperature when they go in. Does 20 minutes at 180°C in a fan oven sound in the right parish?

    I never wrap the breasts in foil, I just put them on a tray and bung them in the oven for about 25 mins at 180C (fan oven)

    How about DIY chicken tortilla wraps?
    Cut the breasts in to strips. Dip them in flour, then egg, then breadcrumbs. Put them in the fridge for an hour before shallow or deep frying them. Serve them with sides of chopped onion, grated cheese, bacon, BBQ sauce, etc... Don't forget the tortillas.

    Also, add some seasoning to the breadcrumbs.. salt, pepper, paprika.

    How about a curry?
    If your not confident there some great jar sauces to start. Maybe a korma (not very spicy) or a tikka masala 

    Other thoughts would be chicken kiev in filo ...very easy and very tasty or maybe a bacon wrapped chicken breast stuffed with your favourite cheese
  • We do chicken curry - out of a jar - with ours
    Stir fry - as mentioned
    Chicken fajitas; so just cut then into strips and fry with a bit of fajita seasoning from a packet. Heat bought fajita wraps - or not as you prefer - spread with sour cream/guacamole/salsa, wrap and eat. I have been known to be very messy eating these!

    Marinade beforehand; I do honey, mustard and soy sauce, or lime juice/garlic/coriander and then pop some foil over and bake in the oven for about 25 mins.

    When I do chicken stirfry I add a glug of dry sherry and some oyster sauce.  Yum.
