New contract or upgrade for newby

I have an old iPhone that is paid for and now on a sim only deal with EE which has gone past its renewal. I want to get the new SE and keep the same number. I don’t understand whether this is a new contract or an upgrade, it seems as though new contracts are better value but where’s the catch?

A new contract comes with a new phone number - with EE you would probably have to port you current number to another network then back to your new EE contract.

Consider instead the purchase elsewhere of your new phone SIM-free at the best price you can find, and simply put your current SIM in it. It's very likely to be a cheaper option than an upgrade or even a new contract.
