Airline changed covid testing policy after I booked

    All transits via the whole of the UAE now require a negative Covid test.
    Government policy, not the airline.

    Ahh so your question is different from original.   You don't want to go to Australia and are looking for loopholes?   With you saying you couldn't get a test, people were responding more to that but other than the flights being cancelled I don't think you will be successful in getting a refund.   You may be lucky and get a rebooking?    Which wouldn't be bad for you if you have family in Australia as you know you will be going sometime although I doubt you will get it for anywhere near same price.

    Your biggest obstacle to anything connected with amending / cancelling this booking is that you if I am correct booked via LastMinute.com in July.
    Caveat Emptor.....
    Whatever you do don't look at Trustpilot.
