Don't just call them idiots or assume that you'll be believed when you can potentially produce quality evidence to put them to the sword.

I replied to Eurocarparks after they sent the original ticket/ demand. I politely replied with their enclosed reply letter stating the events on the day asking them to check their cameras. Obviously put in the bin because i received another pay up letter. I did a SAR, and emailed a complaint to them in May last year. The SAR included 6 items notification 'letters?' they claim to have sent: I genuinely have never received them. 
I did not ask for an ANPR maintenance check, I demanded they simply check their cameras, that car park was crazy busy that day, Liverpool FC were doing the European cup parade, hence my reason for dropping people off to watch. It was bumper to bumper on both visits because there were tens of thousands of people around.. 
I have no sat nav evidence of my journey now. 
A witness statement?, I picked my wife up coming coming home, the others opted to stay. This is my story, chasing me is a pure scam, I entered one entrance and exited another, i did not park anywhere on that day apart from outside my own home.
I have made protestations and complaints to them, I know now, it's been totally futile. There is a court 'date' 1/4/2021, I was of the opinion that with all the correspondence i have received, I could simply state the simple events in a quick court hearing, but on balance, CEL have through my own ignorance, are going to force a random driver to pay this false parking charge.

I have another dispute with another car park recently, thanks to this forum I am armed to the hilt with the correct procedures and evidence from the Newbies thread, that will end in a successful outcome.

My dispute with CEL should have followed from day one by a wholesome Newbie thread, but I went through the CEL channels thinking it was an honest approach. WRONG!!!

With a court date (?) approaching and their offer of a reduced payment, I feel like my backs against the wall now.

There's usually time to fix most fxxx ups.  When's your deadline?

Get a witness statement from everyone you dropped off and the Mrs. 

It's highly likely if there was nose to tail traffic in and out the cameras didn't register.  It'd be bold to suggest x4 people are lying in statements. Ideally all will be available to jump on the video call for trial.

Also, even if you go down on the ticket, remember you can and should still fight to get the bolt on costs excluded.

A witness statement should set out the facts in support of the defence you filed earlier. There is an example in the NEWBIES, and plenty of examples how to set one out by searching the forum for WS and/or Witness Statement/witness statement.

You should get everyone who was in the car to write a brief witness statement as well setting out their version of the facts.
On X date I was a passenger in car VRM XXXXX. The driver dropped me off at Y location at ? o'clock then left the car park. The driver returned to pick me up at the same location on the same date at ?? o'clock. I attended *football related event* and here are my tickets/receipts etcetera.
A statement by someone who was present at the time is evidence.

If the driver has smart 'phone tracking enabled, is the historical data still available to show that they left the car park and returned? Does the driver have receipts or eye witness accounts of them (and the car) being elsewhere?

As soon as you get the scammer's WS, post it here as already advised. Only redact YOUR personal data.

That's an odd thing to do, given the letter you just showed us isn't from Euro Car Parks, but from Civil Enforcement Ltd.

You need to be expecting each stage. 
Don't go thinking defence is your only job and missing your WS & evidence stage, or agreeing to the case being heard on the papers or any such rookie errors that the NEWBIES thread coaches everyone to easily avoid.

This process was no surprise to you.   I told you how to prepare and even mentioned WS stage!

 Are you saying they've complied with the court order dates and you haven't?  Don't answer that.  Read the Hearing Date Order and see what your deadline is for WS & evidence and catch up NOW, this weekend.
