I'd suggest best way to approach it is to say you're willing to do X number of nights or specific days so you're showing willing but pointing out that the rest of the time should be picked up by others who haven't worked evenings previously.
If they push back on them, then I'd suggest to them that your flexibility and skill set means you're more valuable than the others and therefore agreeing to take on more evenings (if willing) should be met with a pay rise.
If they refuse that, then you've got a choice - accept it because the rest of the job is fine (or perhaps accept and start job hunting), refuse and risk being sacked or threaten resigning if that's enough for them to keep you. Whatever you pick you need to be willing to accept the outcome of those actions - so how easy could you replace the job in a period of higher unemployment.

Whilst it could well be stereotyping and discrimination as to why you're selected, i think that would be a very difficult one to prove so I'd probably not be bringing it up as unlikely to help achieve the outcome you want.

Do management know that they have a potential work rota issue bubbling away under their noses? If not they should know. The 2-10pm shift (and part time patterns) is fairly rubbish but that is besides the point. Raise the issue with management but don't refuse to do any as that is the way out if the door.

So who works until 10 pm when you don't?

What happens when you are on leave?

Too much to hope you're in a union?

Present solutions if you can. Employing 'late' staff sounds sensible.
