If you sold the caravan "as is" then it is exactly was described - she only has herself to blame by not inspecting it before she purchased it. Your bank will get in touch with you if it does get disputed and you will have an opportunity to defend yourself before any money is taken - provide them copies of the receipt of sale and that should be it. Odds are she is just playing hard ball to get a better price after the fact - I'd just ignore her.
In the absolute worst case scenario and the money gets returned to her then legally you will still own the caravan, so you can report her to the police as having stolen your property if she fails to return it. It'll be a pain in the butt to deal with, but she won't ultimately get to keep your caravan and your money.1 -
As well as keep all the emails. Adding them to all your other evidence will help, as it will not show her in a good light.Life in the slow lane0

OP - just noticed in your signature that you're looking to complete on a property purchase next week, so if you're planning to use any money in the account whose details you provided to the caravan buyer, you'd be best to shift those funds elsewhere as soon as possible, so that in the hopefully unlikely case of her persuading her bank that you're a scammer and the banks agreeing to freeze the proceeds, you'd be protected if that money was no longer in the account....0

I'm sure you will be fine anyway, but I always pop "sold as seen" on anything like that I sell. Just for utter security.0

Hi sorry I’ve been away all week. She went quiet from Monday so hopefully realised it was her own fault for not viewing and gone away. I did pay my conveyancer the fees and deposit on Saturday when she was kicking off just incase she did manage to freeze my account or anything. That was the main reason for my sleepless night but my full mortgage funds are safely with the conveyancer now so panic over! Thanks for all the replies.Mortgage started August 2020 £69,700
