EasyJet travel

Hello,
we (me, mum and wife) booked to with EasyJet to travel to Italy for a family wedding in Sept 2020 which has been postponed until September 2021, due to the virus. Mum is now too frail to travel and I have shielded so am unlikely to want to go unless I have been vaccinated. Are we likely to be able to cancel and have a refund on one or more of our tickets or, if that is not possible what might be our best option?
