Have you  checked prices of  other holidays for your dates?

As you could start a claim for a cancelled holiday ( using Ryanair's flight cancellation as proof),
if you get your money  back,  book another holiday.

That would be our intention, yes. But how long would it take to get the money back? As to book another holiday this is what we'd need!
If you paid via card  start a Chargeback,  stating  you holiday has been cancelled.
And that would be okay? Even with only one flight cancelled? Would we still need to inform LM?

If you bought a package then yes, if anyone of them is cancelled then the whole package is cancelled.
Normally be easy to sort out  but  doubt you will hear from them anytime soon

So just to clarify. We start a chargeback claim with the credit card company with no need to inform LM and that should be it?

You could e-mail them  customercare@lastminute.com  and give it a few days for them to reply.
If no response then raise a Chargeback.
