We have our integral garage converted to a room. In fact it’s been a bed room, small living room and currently a study. Very useable small space actually. When a secondary living room we had a 2 seater sofa, a single chair and a tv unit and tv. We also had a nest of little side tables. Would not fit much else in and certainly not a central coffee table. It is narrow but certainly workable and in ours we also have a  bathroom sink and shower cubicle due to a previous use. We are in fact soon going to change it back to a living room with sofa bed for a semi occasional bed usage for our eldest who is in the army.

I understand you wan to make open plan but have you thought through about the disadvantages? Noise, cooking odours, heating, cleaning, etc. Many open plan designs are hard furnished, use flooring, etc. making for visual appeal but not very comfortable. If people are going to be at home more would that open space be tolerable? It's personal decision and I went for rooms for the above reasons.

This does concern me yes but i cant think of another way to make the kitchen overlook the garden as its on its own at the front of the house in a seperate room.

To move the kitchen would just be way too much money.
