I've had a look at Expedia T&Cs and couldn't find any reference to a fee if the airline cancelled ( only if the customer did), so none should be deducted.

On your other issue I would write to Virgin and Expedia stating you reject an open ticket.
I would also copy it to bank stating you have rejected an open ticket as you can do under English law
As Expedia could say you been issued with a open ticket so the Chargeback fails. ( So giving the bank that info pre-empts this)

It wouldn't surprise me that's why the have did this (making it into an open ticket), trying to get Chargebacks or S75 to fail

I agree. It wouldn't surprise me either. Email now sent to Virgin, messaged Expedia via Twitter, (and taken a screenshot) and emailed the CC.0

I'm a very cynical person when it comes to dealing with big companies, I tent to look for their ulterior motive, sadly I tent to be right in this outlook.

I have the chargeback in process with my CC. Not sure about the para I have made in bold!

Yep, although I think a few of the firms are just making stuff up hoping that some people will not take things further or accept the credit notes / get charged cancellation fees.1
