I think most banks would say no, but they drop off after 6 years (might be 3) if that helps.1

From a parking point of view, get them appealed. If the appeals all succeed, you've got no further issues.
If the appeals ultimately fail and you're stuck with them, and you'll need to satisfy the lot as soon as possible once you've been advised the appeals have failed IMO.
As above, you'll then need to wait - at least 1 year from satisfying them as a ballpark figure. If you apply sooner than that, it looks like you only satisfied them to get the mortgage - whilst that's probably true, it's not the perception you want to give!
If you satisfy the lot, wait 12 months AND are prepared to pay higher rates, then you could speak to a broker (with evidence they were all parking related) and explain you didn't get the letters etc.
That's the usual excuse and doesn't usually hold much weight (even for 1 x CCJ, let alone 5 x CCJs!!), but you might get someone that's prepared to give you the benefit of the doubt if the rest of your case is good (e.g. perfect credit for both of you, big deposit, good incomes, good bank statements).
And in the meantime, you'll need to let your GF know!1 -

I want to appeal but so far the parking companies are not giving me the SAR which I requested from them0 -
If the CCJ's are from 2016 then they will drop off your account in 2022 anyway which is hardly a long time to wait to make a big purchase like a house purchase. Just bide your time and let them drop off your credit file. In the meantime keep your credit file squeaky clean and in 2022 you will get a mortgage at high street rates and any outfall from coronavirus should have either sorted itself out or be well on the way to sorting itself out.1

You can try getting them set aside but I personally think that will be a road to nowhere. I would probably pay them off and satisfy them, which will look better on your credit file to potential lenders then leaving them unsatisfied. Then it is just a waiting game. Depending on the market in a few years you may be eligible for an adverse mortgage.2
