    Had quite a few carrots in the fridge so have decided to make some spicy carrot soup some of which will be for lunch tomorrow and the rest will be portioned up for the freezer.  DH will moan if we have it two days running or even twice in one week!

    So Monday's debacle with a derailed train on my train line, meant a 3.5 hour journey in to work & a 4 hour journey back!  The commute was almost as long as my usual working day!  Needless to say dinner on Monday was not had a home, and instead was McD's drivethrough - honestly I need to remember for next time that toast and jam with a piece of cheese and some fruit would have been better.  We don't normally eat McD's and now I remember why! 🤢

    Last night was also a reverse plan failure, given that I had a weird craving of fried chicken & bacon on waffles drenched in maple syrup.  Stopped in at MrL's on the way home and picked up another bunch of things we never eat!  Chicken goujons, streaky bacon & because no normal waffles were to be found, some potato waffles which taste like hash browns, but definitely not breakfast waffles!  My much treasured maple syrup had an odd odour, so we used honey instead! It was an upf festival & not one we are likely to repeat anytime soon!

    OK - so from those two meals we can all see that the only path now is onward & upward!  My body is now both salt & sugar saturated - both which I should have found in an electrolyte drink instead.

    Tonight's dinner will be a nice healthy one!  Oven baked Korean BBQ chicken thighs which are currently marinating, steamed tatsoi & carrots, and jasmine rice.  I can guarantee that my whole digestive system will thank me for the healthy dinner!

    Sometimes you crave a beige banquet, and other times meat, veg and rice. Both equally valid - and better that you ate SOMETHING after a long and stressful day than ended up getting home, not feeling able to bother and collapsing into bed unfed. Be kind to yourself - I suspect not too many of us on here faced a 4 hour train trip home from work on Monday!

    AWWWWW EH - you are a sweetie pie!

    (...and thank-you for not questioning my Tuesday craving as well - OH pointed out that last week I ate half a jar of pickles (gherkin slices) in one sitting - I'm chalking that one up to a sure sign of dehydration!...)

    TBH - my system has rebelled against poor food choices this week & is begging for some greenery! I"m very happy to report that we have picked up our bi-weekly organic veg box and now have choices!  Coupled with a full freezer we should be able to eat from home for the foreseeable future!

    EssexHebridean I'm with you on looking out for 'on offer' hams over Easter. I used to buy whole salmon around that time as well but there are no fish counters at any of our local supermarkets anymore which is a shame.

    I'm trying to batch cook today. I'm doing a Mary Berry venison recipe and multiplying it by 3. It should give 12-18 portions all (minus 2) will be heading for the freezer. I've also come across an apple pudding with toffee sauce which will use a tin of evaporated milk I've had for ages. I'll have too much sauce as the tin is twice the size for the recipe but it did say it was ok in the fridge for a month and good over icecream so that's where that will head.
    I do find batch cooking helpful and for some strange reason it seems to go further, maybe it's because I freeze in single portions so no leftovers..

    Help:- I made the toffee sauce but it has gone grainy. I think I added the evaporated milk before it was cool-stupid me - any ideas?

    @zafiro1984 - For your sauce - a couple of tablespoons of water and reheat over medium heat, stir to incorporate water and cook until desired thickness. Can add up to .25 of a cup depending on how much sauce you have, but do it a bit at a time

    Have taken a couple of portions of fish pie from the freezer which we'll have for lunch today - the portions aren't big enough for a main meal especially as I'm on a restricted diet at the moment and can't have my usual go to of peas and green beans!  Basically I can only have root veg at the moment and I certainly don't want carrots, swede or turnips with it!

    Healthy Dinner was lush! - felt great after a bout of unhealthy eating :wink:

    Last night was a lovely homemade cheeseburger with all the fixings on baps - tomato, lettuce, pickled red onions & gherkin slices & a small splodge of ketchup and mustard.  Homemade oven fries on the side.  Can I just say one million times better than Monday's UPF heavy version!

    My very weird breakfast this morning was a piece of leftover chicken from the other night and the weirdest hot cross bun known to humankind - deluxe cheese - not a bit of fruit in it - it was a cheese bap with a cross on it - How utterly idiotic!!! (It was tasty though - lol).  the protein seems to have kept me full as other than a couple of cups of coffee, I've not yet fancied lunch!

    Too late for you @zafiro1984 but my mum used to make a toffee apple pudding with a suet crust. You butter the pudding bowl and then coat the inside with soft brown sugar , enough so it sticks to the butter all round and fill it with a bog standard steamed suet-crust apple-filled pudding. When you turn it out the brown sugar and butter have mingled and some has impregnated the suet crust and it is yummy (although far less sugar now than she used, which used to be much runnier
