The mention of spring onions reminded me I have a bag of sliced, frozen (TGTG) spring onions in the freezer. I plan to do that braised little gem lettuce recipe that (I think) @joedenise introduced me to - I can't remember what it is called but it involves spring onions, peas and cream. The price of little gem lettuces should start falling now and it is a lovely light supper dish (especially with Jersey Royals) to make it more filling for my DH.
For supper last night, we had some of the cold potatoes as a rough potato salad (chopped red onion, quartered potatoes and a "sauce of lemon juice, mayonnaise and a tiny bit of finely chopped green chilli, with plenty of black pepper) with an avocado salad for supper. I was worried about it not being filling enough so I blasted the garlic flat bread. I might have to make my own next time, but this one was boughtSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Tea of salmon and asparagus quiche with a few ayna potatoes, followed by strawberries and cream for dh and no sugar jelly with a bit of frozen fruit for me. It went down well and there's a bit left over to do lunch today.
I've just put a piece of gammon in the slow cooker and a chicken in the mini oven in the pantry so I can make a large pie to be eaten cold of hot water pastry, gammon and chicken, layered between sausage meat and two different stuffings. I've already made the stock from various carcasses stored in the freezer.
I wont be watching the main event as it happens tomorrow, as the morning will be taken up with all the animals, but tomorrow afternoon I'll put my feet up, have slice of pie, maybe a glass of something and watch it on catchup.
I can remember the 1953 coronation. We crowded around a small black and white TV down the avenue at an aunt's, had cold chicken and salad and a trifle. The overall memory was that I was made to stand every time the national anthem was played. Both parents were 'on duty' and I can remember my father being called away to someone who had broken his arm. No A&E in those days. How times have changed.4 -
As I diversion i also recall watching the last coronation on the only black and white tv in the street.My husband experimented yesterday making a pseudo 10 minute Coronation Quiche in the microwave using supermarket potato cakes instead of pastry. It worked quite well although the overall appearance wouldn,t have won first prize for presentation in a competition!
But I still think this recipe is incomplete without some savoury bacon pieces to give it a bit of extra flavour bite!!4 -
Reverse Meal Lunch - weird combination, but actually delicious...
...the last whole wheat wrap, the last of the hummus & the last of the tuna/veg salad
OH was dubious about the combination, but it was rather tasty! (He's firmly committed to a boring ham & butter on bread sandwich.)
We now have a tad more room in the fridge so will do a shuffle of contents to see what needs using up.4 YEARS 10 MONTHS DEBT FREE!!! DH had another eye surgery yesterday so it was make do and no fuss for us - Jacket potatoes with beans and cheese followed by an ice lolly!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Thanks @zafiro1984 - apparently the colours are vivid but there is still blurring and a worrying purple smudge. He has a follow-up in 6 weeks but will phone them if the smudge or blurring don't clear in a while. I told him he must not drive yet. The potato cakes were just cooked sufficiently to make a firm base. Not particularly elegant but added enough substance to fill a hungry gap and far less hassle than making pastry from scratch if you don't have any frozen pastry to hand. Broad beans could be substituted by endame beans which are very similar but often look a fresher green colour when broad bean skins can look a little grey and uninteresting.4 -
Thanks primrose, I'll make some potato cakes next week and give it a go.
I'm always looking for different ways of presenting potatoes as rice, pasta etc are out for DH. By accident I put a knob of frozen mash potatoes in the deep fryer. It suddenly puffed up, grew in size and became very crispy; an interesting accident. I don't think I would present it as the main carb of a meal but as a 'garnish' it could be a goer.
Last of the quiche eaten yesterday. The layered pie I was making was still warm and the jelly wouldn't have set in time but it didn't matter as we were by ourselves all day. It's now finished and sitting in the fridge we're going to have a slice tonight with some salad, open a bottle and have a rest.2
