I might have to copy that roll idea @Soontobeoap as I have to do the vegetarian choice for Sunday's lunch for 60 we are doing. It was going to be a pie but a roll sounds great. I am fretting about broccoli - I am supposed to get 7 heads and I understand it is being rationed!
We had the other half of the shepherd's pie I made, with tender-stem broccoli that was still fine from the TGTG bag last week. Then after my study group I made pancakes (with lemon and sugar, yum!). Ooh, I need to get some chicken out of the freezer for tonight now, as I forgot earlier!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Thanks @suffolk lass. It is supposed to be done in a ring by cutting out squares of pastry and laying them in a circle but I didnt make enough for that. Be lovely for a lunch for 60 though 🙂
3RD day of reverse meal planning. Savoury mince from a freezer batch cook with rice and any spare veg thrown in.

DAY 4 of my reverse meal planning journey. Porridge made with water for breakfast, left over rice from last night with cheese and left over salad bits for lunch. I will throw in a bit of raw onion for a bit of added flavour, scrambled egg wrap or on toast for dinner before heading out for a game of crib. I made DH a trifle yesterday to satisfy his sweet tooth for a few days

I have just cooked off some onion, carrot, celery (the middle bit) and a leek with a ladle full of the thick tomato soup and it is what I would call "spreadable" consistency. When cold I will put it in the fridge, ready to spread on the shop-bought puff pastry along with my other mixture of onion, butternut, chickpeas courgette and spinach, with a sprinkle of garam masala - so orange and translucent and beige and green. Then roll it up and cut it like a roulade - my veggie take on your burger rolls @Soontobeoap. I might paint the edge with beaten egg or milk but I need to check if they are vegan first.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Just had some shepherds pie mix with a cheesy potato topping which was really tasty as half a small frozen black oudding was mixed in. It just added a little bit of "oomph" and was really filling.
will definitely try this mixture again.4 -
Hey all - bottom-of-the-fridge stir fry with us last night using up yet more odds and ends - I'm down to half a small cabbage lurking now which feels like an amazing win! The sir fry saw off the final head of veg box chicory and the last couple of carrots too, and also used a pack of turkey from Christmas out of the freezer.
Tonight is going to be fish pie - I'm blaming you lot for this! I'll have to dig out the random tatties to use up as they'll work well mashed, then that will just leave me with the rest of last week's YS'd bag (although we'll get more in the veg box on Saturday evening too)
Very much hoping I can get tomatoes and peppers when I shop at the weekend - seeing very mixed reports about whether people are finding them in stock or not.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

My local Morries happily sold me seven heads of calabrese yesterday and there were certainly peppers and lettuce (I didn't look for tomatoes) at 10.00 after I clicked and collected. Frozen peppers are good too, of course, and apple is a good sub for tomatoes (in sandwiches or with lunch boxes)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Have got a pack of chicken legs in the fridge that need using up, I think I’ll put them in the slow cooker tomorrow with onion, carrots etc and make a chicken noodle soup for dinner. Have also got some teriyaki tofu which is BBE 27th - this will either be dinner on Monday or will be heading for the freezer (am assuming you can freeze tofu 🤔).There’s a large bag of potatoes lurking in the pantry that I got in my SM last Sunday - I think I’ll get some leftover beef casserole out of the freezer for dinner this Sunday. Will do mash and the last of the carrots/broccoli.
I have the princely sum of £17.41 left in Feb’s grocery budget - whilst it doesn’t really matter if I go over it, I’m determined to stick to it on principle 😂 Should be able to manage it, will boil up some eggs for packed lunch sandwiches and I have plenty of cheese, salad and frozen veg 🤞Books read 2023 - 49/754 -
Going to make a seafood salad for lunch as have half a pack of sea food sticks in the fridge, have got some frozen prawns out defrosting so will mix with some salad stuff from the fridge all chopped and mixed together with a yoghurt dressing.
For dinner tonight it will be the LO cottage pie I made a couple of days ago with plenty of frozen veg plus some of the cabbage from the fridge.
That will use up all the LOs in the fridge hopefully. Will then need to do a top up shop early next week. There's plenty of food in the freezer for the weekend.
