Slightly off plan as we didn’t get the nut burgers out in time and I’m quite glad we didn’t as instead I used the 2 age old beetroots that I was going to pickle in a beetroot risotto instead. Chucked in a bit of Brie and a bit of Parmesan and hub who doesn’t like beetroot unless pickled or in cake said it was one of the tastiest risottos he’d had! This is seriously high praise since it’s his speciality dish and probably the clincher as to why I finally (after months of refusing) agreed to date him nearly 10 years ago 🤣🤣🤣Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

I have been using up salad from the fridge since DH set off on his epic bike adventure (driving to Sweden with almost 15,000 other Harley Davidson bike riders for the international super-rally). I composted the last portion of soup and may yet scrap some beans that (I suspect) have been in the freezer for 2 or even 3 years! My freezer reorg is underway and with buying 3 chickens (for £10), the meat and bread freezer is groaning.Save £12k in 2025 #2 I am at £2664.85 out of £6000 after March (44.41%)

Today I had custard about to reach BB date and some rhubarb that desperately needing using up, so I made a rhubarb and custard cake. I hope it's good as it's quite a big cake! DS will eat the rest of the custard with bananas for pudding. Avoided waste there2025 decluttering: 1,231🌟🥉🌟💐🏅🏅🌟🏅🌟🏅

Mucho reverse planning going on here this week as having been away over the long weekend and so not shopping on our "usual" day I have made a sneaky decision to see if we can get away with avoiding the shops this week allowing we have had our veg box delivered. So far the only spend aside from that is a teeny 30p on some YS'd bakery goods (bagels & crumpets) by MrEH on the way home on Saturday - the bagels have enabled us not needing to make rolls for lunches this week though so all good there. I got bolognese sauce out of the freezer for last night, and this evening will be a buddha bowl type arrangement with some leftover lamb from the roast the other week (also from the freezer) and some lightly stir fried veggies, then I'm looking at dhal for Thursday I think as we got sweet potatoes in the veg box and someone on the GC thread recommended a lovely sounding recipe for a dhal using those. Tomorrow will likely be a thrown together salad using all sorts of bits that need it - rocket from the veg box, the last red pepper, some veg box tomatoes, the remaining chunk of feta cheese...probably some beetroot too as we still have lots. No idea about Friday but it might possibly end up as sausages and chips as those are also things we have in the freezer currently! MrEH is threatening a trip to the shop for milk - and in fairness to him he might actually need some, but we'll see.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

Using up some tofu and half a courgette in the fridge to make soybean paste stew for lunch today as we have all the other ingredients in already.
