    Morning all - we had our planned salad last night although not with the originally planned protein component of smoked mackerel as I couldn't get a sensibly sized pack. Hard boiled eggs instead - and it was very nice! 

    My meal plan tells me that this evening will be sardine and butterbean pasta - this is an adaptation of a Jack Monroe recipe as I recall - thankfully I do still have some sardines in spite of the current epic shortage - I'll probably use one tin of sardines and one of pilchards that way we both get an oily fish portion but without using two of my precious stock of sardines. (the tin size being better for one of us to have on toast, if wanted, than the pilchards). Budget friendly as it uses a tin of chopped toms, plus a squidge of puree, a pepper - I can get away with using a green on in this leaving the red ones for other uses - some mushrooms and a wodge of 20p spaghetti along with some herbs and spices. Tasty, healthy and filling.

    I know exactly which Jack Monroe recipe you're talking about @EssexHebridean, haven't had it in a while and now have a craving for it!  But tonight I'm probably going to have pepper and tomato risotto because it was just so good last week and very filling.  Or I might have a jacket potato again, I don't know depends on how I feel when it comes to dinner time 😏

    I'm afraid it's a stir fry tonight as I've a few suitable vegetables that need using up. Protein content will have to be boiled eggs.

    Always worth having a few peanuts or cashews in stock for circumstances like this - they can add a nice texture to a stir fry.

    Cream asparagus tagliatelle for dinner last night without the cream. Subbed for the last bit of mascarpone cheese and last bit of cream cheese! Served with a freezer YS garlic flatbread. 

    Used up the asparagus that I wanted to make the most of, it was very simple but yummy. Leftovers we had for lunch today. 

    There are 2 fish fillets breadcrumbed and cooked in the oven, along with some roast potatoes but hub wanted a lighter dinner of soup tonight so I think this will either go for tomorrow or Thursday as a already cooked meal. 

    Managed to make use of the oven yesterday whilst the bread was in and roasted a load of parsnips and other veg for the soup and then tonight when the potatoes and fish was in, I’ve pre roasted the aubergine for the brinjal bhaji for later this week. 

    It’ll be soup for lunch tomorrow with half a fresh stick from Olio

    Curried the chicken thighs and had them with flatbreads. He made 4 flatbreads and eat 2 (I had one) on the night and as usual there was a small pot of leftover veg. He had it last night after we collected pup wearing cone of shame from the vets (neutered). I had two fried eggs on toast. Lost the corners of my toast to small pup who was "not going to be hungry" - he enjoys his food and was reassuringly normal when DH tried to snack an apple!

    I have two large burgers out of the freezer to have with salad tonight, if either of us comes in early enough to cook.

    Lots of using up today.  Lunch was more of the cup a soup, with the last of a pack of pitta bread, cheese, salad leaves and more of the wild garlic pesto I made last week.  Dinner was the leftover pasta sauce from a few days ago with a pack of gnocchi.  Pudding was a rhubarb and orange cake made because I have too much of both of these ingredients from my fruit/veg box, although the recipe was enormous and I got two cakes out of it.  So I now have a whole cake in my freezer!

    I forgot to get anything out of the freezer for supper. Cooked the two mahoosive sticks of rhubarb in my YGTG bag though, then had yogurt with berries and a drizzle of honey instead. At least it is cooked and won't go slimy now. I did macaroni cheese for supper and there is a third left (should be half, but DH served it up as I was on a Zoom with my friends). I'm helping at a farm show today so might offer it to DH and have a salad when I get back.

    With the Beekeepers Association Trade stand. Not all day so will get the chance to wander around a bit. I might struggle with my back so I feel taking two paracetamol might be prudent to stop me seizing up! I might also get to graze on a few food products as we are evidently near the food hall. So my salad mention might just sound noble and be a diversion tactic!!
